Rosemary Foccacia

2 tsp active yeast

1 tsp sugar

1 cup warm water

2 cups flour (strong or plain)

1 tsp salt

1 Tablespoon olive oil


Extra oil oil for tin and on top of dough

Garlic (optional)

Sea salt

Rosemary (optional)


Add yeast, sugar and warm water to a large bowl and stir and leave in a warm place till it foams up - usually 5-10 minutes.

Add flour salt and oil and mix well. No need to knead!


Cover and leave again in a warm or sunny spot till it has risen (doubled in size)

Press into a roasting dish or tray with sides about 20cm x 30cm and cover and leave again till puffed up.

Press finger into dough to cover all the dough in dips/holes and drizzle with oil. You can just add salt or fresh rosemary ,garlic, olives etc


Bake 180 for about 20-25 minutes till golden

This recipe can also be used for pizza bases!
