Gooey Chocolate Brownie

A decadent dish especially if it uses 4 eggs.

4 eggs!!! But great for a birthday or a special occasion.


240g butter, melted and cooled

2 tablespoons vegetable oil

1 cup white sugar

1 cup brown sugar

4 eggs

1 tablespoon vanilla extract

1 cup plain flour

1 cup cocoa powder

1 cup roughly chopped chocolate or large chocolate chips/buttons


Preheat oven to 175°C

Lightly grease baking tin or slice tin with cooking oil spray. Line with baking paper.

Combine cooled melted butter, oil and sugars together in a medium-sized bowl. Whisk well to combine. Add the eggs and vanilla.

Beat until a light colour.

Sift in flour, cocoa powder and fold the dry ingredients into the wet ingredients until combined. Don’t over mix!!

Gently fold in 3/4 of the chocolate pieces.

Pour into prepared pan, spread out and top with remaining chocolate pieces. (Pop in

some frozen raspberries if you have some)

Bake for 25-30 minutes for a gooey brownie or 5-10 minutes longer if you like it set more.
