Protein packed!

I wanted a healthy protein packed post Gym lunch - that might also look good! As most of my food wants to look good lol. I had spinach and cottage cheese and eggs and thought omelet but then saw the neglected waffle maker and threw this together. Served with a relish! Would work well with feta cheese too.


A handfull of wilted spinach - squeezed out water. Added a few tablespoons of cottage cheese and 1 egg, pepper and some spring onion. A tablespoon of self rasing flour to help it all stay together and make a batter of sorts. It was pretty gloopy and into the waffle maker... If you dont have a waffle maker just pan fry spoonfuls in a little olive oil.
