Quick Apple Strudel

3 large apples, peeled, cored and cut into small cubes

1 tbsp cornflour

1 tsp ground cinnamon

1/2 cup (100g) brown sugar

1/4 tsp vanilla extract

7 sheets ready rolled filo pastry

50g butter, melted and slightly cooled


Line baking tray with baking paper. Oven to 180c

Mix peeled and cubed apples in a bowl with cornflour and sugar and spices add vanilla and mix till apples are coated.

Lay one sheet of filo length ways on tray and brush with melted butter, add another layer of pastry and repeat till all 7

layers are brushed with butter and stacked.

Pour apple mixture down the centre in a line and fold sides in and tuck in ends making sure no apple can escape.

Carefully flip so the folds are underneath. Brush with last of butter and bake at 180c till golden and crispy (about 30 minutes)

Let cool slightly before serving and dust with icing. Serve with cream or vanilla ice cream.
