Meaty but not meat.

We have been on a vegetarian extravaganza for the last 2 months. I have done this on and off for years. It really make you focus on just eating clean (er) and creating lots of meat free meals. But what do you eat when you feel like eating something with a bit of oomph, texture or meatiness? Ta da.





I sliced some Aubergines into quite thick rings and made up a quick crumb mix with Panko brreadcrumbs and fresh herbs and salt and pepper. I dipped the aubergine into the whisked egg and then into the crumbs to coat and onto a baking

tray. Next to join them was Portobello mushrooms also egged and crumbed. You could add some grated parmesan to crumb mix, that's good too. Bake for about 20-30 mins and served with salad. Delicious.
