The courgettes in our garden, or zucchini depending what school you went to have gone crazy so we have been eating them daily.
Todays lunch idea was chip shapes/strips of courgette dipped in egg and then into a panko breadcrumb and parmesan mix. Salt and pepper and baked for 10-12 mins till crispy! I had mine with a lemony mayo, but relish would be good too.
