Courgette Fritters


2-3 Medium courgettes (grated)

1 egg

1/2 cup self raising flour

1/2 tsp chilli flakes

Spring onion or chives finely chopped

Salt and Pepper

Olive oil to fry


Add grated courgettes to a sieve/colander and sprinkle with a teaspoon salt and leave to sit and let drain.

Squeeze out as much moisture as you can to avoid soggy fritters.

Add to a bowl with flour, egg, spring onion, chilli flakes and pepper. Mix lightly. If too wet add a touch more flour.

The remaining liquid from the courgettes should be enough to make a nice batter.

Pan fry a few at a time and keep warm in oven. Serve with sour cream and sweet chilli sauce.
